The moment we say “Kesari” our mouth would start watering in a jiffy on thinking about the richness and exotic aroma of ghee and taste buds tickling sweetness of sugar. Well Kesari with a fruity twist that too with a Summer special fruit, doesn’t it sound “Mango-nificient “??

Ingredients:                       
  • Mango pulp: 1 cup
  • Ghee: 1 cup (varies as per need)
  • Sugar: 1 cup
  • Rava:3/4 cup
  • Cashew: Few
  • Dry grapes: Few
  • Chironji dry nuts (Saara paruppu): Few
  • Illaichi powder: 1 Tsp
  • Kesari powder: 1 Tsp
  • Water: As per need
How to make the Mango Kesari??


  1. Add few drops of ghee in a kadai (non-stick kadai is preferable) and roast the Rava until it gives a good fragrance.
  2. Add sugar after Rava is well roasted in ghee. Keep stirring the mixture while adding the sugar.
  3. As sugar starts to melt add hot water into the mixture. Keep stirring while adding water to avoid the mixture from sticking to the bottom of the pan.
  4. Now keep stove in low flame and keep stirring. Add some more ghee at this juncture and let it get cooked for some more time.

  5. After the mixture becomes little thick, add mango pulp. Continue to stir well.

  6. Once the water content gets completely observed and the Kesari comes to a thick consistency (we will know that while observing), add ellaichi powder, cashews, Chironji dry nuts and dry grapes at this point.
  7. Add balance ghee and give a good stir and remove the Kesari to be served hot.
Quick tips:
  • It would be better to roast the rava once before it is added to the ghee for roasting.
  • People who feel that sugar mentioned above is less, then 1/4th cup of sugar could be added additionally.
  • It’s not necessary to roast cashews for this Kesari but if needed so it could be done.
